Okay the last thing I want to do after a 10 hour daycare day is prepare a huge meal. I think this is why I don't cook very much. Eating out is my weakness. I lack in the idea department I guess. What are some quick and simple meals? There's only Nathan and I so it doesn't have to be alot. So far I have...

Tacos
Spaghetti

See, I need help! LOL

i use five minute rice alot and fresh veggies cause dd loves those especially little tomatoes and cucumber and carrots
meat - i fry up chicken breasts or stir fry beef (it comes precut in the pack)

these are really quick meals


or premade pizza dough all you need is the sauce and shred cheese and here we like pineapple (can) and ham

I'll try to think of some more ideas

what does he like most?

chicken? hotdogs? tuna? liver haha?

He likes hotdogs & tuna but I want meals not daycare food kwim? lol

chicken -dd loves when I do this and we add barbq sauce to the crock and either make bbq sandwiches or Chicken Tacos

Make lasagna on the weekend - make more than you need .. put in serving sizes big enough for your family and freeze.

Sandwiches - subway at home :)

Chicken salad - take make your salad and cut up chicken strips and put in your salad

This is one of my dh favorites

you can use about any meat but he likes chicken done this way

Make chicken and cut up the meat into shreds or bites ...
Make chicken gravy
Hi Hi crackers crushed up and add butter to make them like a crust

Take the chicken and put in the bottom of your dish
add gravy on top
Sprinkle the butter crackers on top
Bake on 350 till its bubbling and the crackers look toasty

We do this with turkey as well

Have you conside making cheese enchiladas. This is one my favorite from my kids. Just get a small can of mild enchiladas sauce, monterey cheese, colby&jack cheese and corn tortillas. You just wrap the corn tortillas in paper towel and damp it a little. Heat in microwave for about 1 hour so it will be easy to roll without breaking the tortillas. Stuff it with grated monterey cheese and continue to do this until your small dish is filled and spread sauce all over and top with colby&jack cheese. Heat in oven for 30 min or less at 350 degrees. You just need to get the cheese melted. By the way the left over corn tortillas I freeze it and the next time I use it I break what is needed and wrap with paper towel and heat it in the microwave.

For our veggie we have cucumber salad which is peeled and sliced cucumber with lemon juice, little bit of olive oil,salt, pepper and garlic salt with parsley.... My kids love this and we also have refriend beans with sprinkle of cheese on top. You can make this as big or small you want. I would make enough for two days.

You will need:
grated monterey cheese
grated colby and jack cheese
corn tortillas
small can mild enchiladas sauce
Wrap corn tortillas in paper towel and wet it lightly and cook in the microwave for about 1 minute until is easy to roll without breaking. Please not the extra tortillas you can freeze in the freezer for next use. When you do use the freezer tortillas just wrap tortilla with paper towel and cook for 2 min.
Stuff grated monterey cheese in corn tortilla and roll put in 8 in.pyrex dish. Continue until the whole dish is covered and pour enchiladas sauce all over the tortillas and sprinkle all over with coby & jack cheese. Cook in over for about 30 min until is melted at 325 degrees.

Cucumber salad
peeled and sliced cucumber
garlic salt with parsley
lemon
olive oil
salt & pepper

Just mix it all together and eat.

Can of beans and heat in pan with butter or microwave in the oven with out butter and sprinkle with cheese and serve warm.

My kids loves these dishes.

I make these :) yep yep ..

I have added meat to them such as taco meat ..if you have a small child who's taco falls apart this is very easy for little ones to hold on to!!

I cut up baked chicken left overs and even just made and add to them ... shredded beef left overs :) yum

Ok you all I am not sure if your interested but here is a very simple crock pot recipe that my kids love. Cook a rump roast with onions all day and before you eat pull the rump apart and add your favorite barbeque sauce. Our favoite is Sweet Baby Ray. Then you either put in on bread or eat just like that. We cook a veggie and rice or potatoes to go with them.

yummy ... I make the roast ..then the next day with the left overs I do that Kareybear!

I just purchased a pulled pork seasoning pouch I am going to try. .. Since I have so much darn pork!

Ok I made these enchiladas.............and you have to make them for me ..lol mine were "grossie" as my grandsons put it nicely!

They took one bite said tried it .. I am done! i said ohh you didnt eat very much and Dakota looked up at me with those big blue eyes and said well its kinda grossie maw maw!

I took one bite and I said the same thing! ... My friend makes them and they are yummy - wth did I do wrong? lol
