My kids love this and we also have refriend beans with sprinkle of cheese on top. You can make this as big or small you want. I would make enough for two days. Ok I made these enchiladas.............and you have to make them for me ..lol mine were "grossie" as my grandsons put it nicely! They took one bite said tried it .. I am done! i said ohh you didnt eat very much and Dakota looked up at me with those big blue eyes and said well its kinda grossie maw maw! I took one bite and I said the same thing! ... My friend makes them and they are yummy - wth did I do wrong? lol
You must be a bad cook!!! LOL LOL Well ummm I am not sure. It isn't that difficult to make so ummmm I haven't a clue. Is it the sauce or did you not cook it long enough. Was it only cheese or did you make it with ground beef? What?

Ok you all made this new recipe last night for dinner and it was so good. I love it because I just threw everything in a crockpot and made homemade bread for it.
3 pounds lean beef stew meat in 1-inch chunks
3 large carrots, peeled and diced
1 16-ounce can tiny whole onions, drained( I used fresh pearl onions)
1 16-ounce can whole tomatoes, undrained
1 15 or 16 ounce can peas, drained ( I used frozen peas)
1 can beef or vegetable broth
1/2 to 3/4 c. canned pumpkin( Good source of fiber shhhhh don't tell the kids)I promise you can't taste it!!!
1/2 c. white wine
1 T. Brown sugar
4T. quick- cooking tapioca
1/2c. dry unseasoned bread crumbs( I dryed 2 slices of bread in the oven for about 5 min to make my own whole wheat bread crumbs then cut in very small slices)
1 bay leaf
salt and pepper to taste
Spray a 5-quart Dutch Oven and its lid with non-stick cooking spray. Combine all ingredients in the Dutch oven. Cover and bake in a 250-degree oven at least 7 hours. No need to stir. Stew will have a rice brown gravy. Remove bay leaf and serve. ( I don't have a Dutch oven so I threw everything in the crock pot and cooked) Enjoy!!

Karey I use to make something similar to that .... I never added pumpkin I bet that gave it some zip??
I make chili - thinking of putting a pot on today because my weekend is too crazy!
Instead of adding water I use V8 Juice that takes care of the eww veggies at my house  plus it gives it some zip!

Ms. Debbie's Chili
1 big can of Brooks Mild Chili Bean
1 Big Can of V8 Juice
2 Lbs of Hamburger
Chili spice,garlic, onion
I brown the beef, and then in a big crock or pot I put in the beans and v8 juice add seasonings like garlic, onion, chili spice
I then drain the beef fat off and add to the chili!
simmer it till it is thick -
Now
day 1 we have chili
day 2 Chili mac - spagetti noodles poor chili over add cheese topping
day 3 chili dogs
day 4 if anything is left we may just have chili poured over bread - my daycare kids love this topped with cheese
